Put some guardrails on AI chat to make it less dumb. I want to keep using a fast model for small edits but fast is dumb. Also added a switch to allow people to switch to a smart model instead.

Fixed a dumb one: starting a new quote could show the AI chat from your previous abandoned quote. Draft now forgets chat on reload, keeps everything else.
